  • 4 tablespoons Butter Melted; both salted and unsalted are acceptable.
  • 3 cups Flour Opt for unbleached all-purpose or bread flour.
  • 1 tablespoon Maple Syrup Can substitute with honey.
  • 1 cup Raisins Soak in hot water for 30 minutes before mixing.
  • 2 teaspoons Cinnamon Use to taste.

Step-by-Step Instructions
  1. In a large mixing bowl, combine your active sourdough starter, whole milk, melted butter, and maple syrup. Mix in unbleached flour until a dough begins to form, then fold in soaked raisins and cinnamon.
  2. Cover the bowl with a damp kitchen towel and let the dough rise at room temperature for 2-3 hours.
  3. Heat a griddle or pan over medium heat, lightly greasing the surface. Allow it to warm up for about 5 minutes.
  4. Gently turn the risen dough onto a floured surface, divide it into equal pieces, and shape them into rounds.
  5. Carefully place the shaped muffins onto the hot griddle and cook for about 10 minutes on each side.
  6. Remove the muffins from the griddle and let them cool on a wire rack for at least 10 minutes before slicing.
