Step‑by‑Step Instructions
  1. Begin by heating a skillet over medium heat. Dice the chorizo into small pieces and add them to the hot skillet. Cook for about 5–7 minutes, stirring occasionally, until the chorizo is browned and crispy. Transfer the crispy chorizo to a plate and set aside.
  2. While the chorizo cools, butter one side of each slice of bread. Ensure even coverage to prevent burning and enhance flavor. Set buttered slices aside.
  3. Place a slice of bread, buttered side down, in the skillet. Add a layer of cheese, followed by the cooked chorizo pieces, and top with another layer of cheese. Finally, top with the second slice of bread, buttered side up.
  4. Cook in the skillet over medium heat for about 4–5 minutes, until the bottom slice is golden brown. Gently press down with a spatula for even toasting. Flip the sandwich and cook for an additional 4 minutes until both sides are golden and the cheese has melted.
  5. Once cooked, remove the sandwich from the skillet, cool slightly, and slice in half diagonally. Serve warm.
