For the Glaze
  • 1/2 cup Ketchup BBQ sauce can be used as a substitute.

Method
 

Directions
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine ground beef, breadcrumbs, diced onion, shredded cheddar cheese, salt, and pepper.
  3. Create a well in the mixture and crack an egg into it. Mix thoroughly until incorporated.
  4. In a separate bowl, combine ketchup and finely chopped chipotle pepper and mix well.
  5. Portion the mixture into small loaves or use a muffin tin for individual servings.
  6. Coat each mini meatloaf with the chipotle glaze before baking.
  7. Bake for 20-25 minutes, until the internal temperature reaches 160°F (71°C).
  8. Let cool for a few minutes before serving warm.
