Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather all your ingredients and tools.
  2. Heat 1 tablespoon of avocado oil in a skillet over medium-high heat. Sear 1 pound of chicken breasts for 5-7 minutes until golden brown.
  3. Flip the chicken breasts and cook for another 5-7 minutes until fully cooked. Remove from skillet and let rest.
  4. Cut the cooked chicken into bite-sized pieces and add to an 8x8 baking dish with 6 chopped Roma tomatoes, 1 teaspoon of oregano, 3 cloves of garlic, and 2 tablespoons of balsamic vinegar. Mix gently.
  5. Spread 1 cup of shredded mozzarella cheese evenly over the mixture.
  6. Bake uncovered for 18-20 minutes until the cheese is melted and golden brown.
