Preparation
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine diced Granny Smith apples, light brown sugar, ground cinnamon, and cornstarch. Toss until evenly coated, then set aside.
- Lay out your egg roll wrappers in a diamond shape. Spoon 2 teaspoons of cream cheese and top with 2 tablespoons of the apple mixture in the center of each wrapper.
- Fold the bottom corner over the filling, then roll tightly while tucking in the sides to seal. Use water on fingertips if necessary to help secure the edges.
- Place the sealed egg rolls on the baking sheet, spaced evenly. Lightly brush each egg roll with cooking oil.
- Bake the Apple Pie Egg Rolls for 15 to 17 minutes, flipping halfway through for even browning.
- Combine granulated sugar and ground cinnamon in a shallow dish for the topping.
- Roll the baked egg rolls in the cinnamon sugar mixture while warm to create a sugary crust.
- Serve warm with a side of caramel sauce for dipping.
