For the Fish
  • 4 fillets White Fish about 1-inch thick
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1/2 cup All-Purpose Flour for dusting
For the Sauce
  • 2 tablespoons Olive Oil for searing
  • 2 tablespoons Butter or substitute with olive oil
  • 2 cloves Garlic minced
  • 1 large Lemon Juice adjust to taste
  • 1 cup Fish or Chicken Broth or substitute with vegetable broth
  • 2 tablespoons Capers can substitute with chopped olives
For Garnish
  • 1/4 cup Fresh Parsley chopped

Method
 

Preparation
  1. Pat the white fish fillets dry with paper towels. Season with salt and pepper, then dust with flour.
  2. Heat olive oil in a large skillet over medium heat. Add fish fillets and cook for 3-4 minutes until golden.
  3. Flip fish and cook for another 3-4 minutes until done. Transfer to a plate and cover with foil.
  4. In the same skillet, reduce heat to medium-low, add butter, and melt. Stir in minced garlic for 30 seconds.
  5. Pour in lemon juice and fish broth, stirring to combine. Simmer for 2-3 minutes until slightly thickened.
  6. Return fish fillets to the skillet and combine with sauce. Heat through for 1 minute.
  7. Serve the fish with sauce drizzled on top, garnished with parsley.
